Paired with Morels and black garlic…
Decant the Burgundy for up to 3 hours before service. Taste wine.
Marinate a hefty NY Strip Steak in shallots, standard garlic, olive oil, salt and pepper for 1-2 hours.
Halve morels lengthwise. Peel black garlic - do not smash or shop. Cut the base from and halve Brussels sprouts; blanch for 2 minutes and submerge in cold water.
Taste wine again.
Cut 3 strips of bacon into half inch lardons, fry until mostly crisp.
Grill or sauté steak until cooked to preference. While cooking add Brussels sprouts to bacon pan, over low heat, and add honey and balsamic vinegar. Cook until tender.
Melt butter over medium heat, add morels and whole black garlic, and a splash of cream. Plate all. Serve immediately with the wine.
